New York’s bagel craze had been calling out to me for a while—and I finally gave in. But in true Vegitupdelights style, I had to give it a fun, colorful twist. So I tossed in some purple cabbage and cottage cheese, and voilà—Cabbage Cottage Power Bagels were born!
Once the dough had rested, I couldn’t believe my eyes. These little bagels looked like lavender clouds—soft, pillowy, and in the prettiest purplish-pink hue (bonus: it happens to be my favorite color 💜). They felt so light and magical, I almost didn’t want to touch them.
But here’s the lesson I learned the hard way: always let your bagels rise on parchment paper, and when it’s time for their boiling dip, flip them gently with the paper into the water. These are cloud-soft beauties—you’ve got to handle them with care ☁️💦.
And the best part? Making sandwiches with them! From the crunch of fresh veggies to creamy spreads, every bite felt like an upgrade to the regular bagel. Making these at home felt like creating a slice of New York in my kitchen—with a whole lot of color, comfort, and creativity.
