Confession time: I’ve always been that anti-healthy-ingredient person 🙈—the one who had to be tricked into eating veggies by my mom with some clever fusion twist. So the fact that I willingly made (and loved!) these beetroot & chickpea cutlets is a true glow-up moment!
And guess what? I still avoid beetroot on its own 😅 but in this form? I was shocked at how delicious it turned out—crispy, flavorful, and with that gorgeous color too. My mini-me would be proud… and my mom? Beaming with pride watching me finally eat veggies without a protest!
Bonus: These cutlets doubled up as a chaat party hit—served with dahi, chutneys, and a sprinkle of sev… because why not turn health into a street-style snack? 🌶️🥄
